Urban Plant Grower's Easter Lunch Guide
Burrata, Tomato & Basil Salad
For starters, we have an easy-to-put together burrata, tomato and basil salad that will take just a few minutes but is sure to impress. Add some toasted bread on the side and you’ll start your lunch off with some colourful, cheesy, tomato goodness.
450g baby heirloom or cherry tomatoes (Or any in-season tomato of choice)
A handful of basil leaves
½ cup of olive oil
3 tsp red wine vinegar
Salt and pepper to taste
Slice the tomatoes and place them onto a serving dish.
Tear or cut burrata into bite-size pieces and scatter over tomatoes.
Add basil leaves on top.
Whisk together the olive oil and red wine vinegar and drizzle over the top.
And finally, to help with digesting all this yummy food we have a wholesome lemon balm tea made with fresh lemon balm. Just add some hot water and honey and lemon to taste. And some chocolate Easter eggs on the side of course!
1 cup of water
1/3 cup of fresh lemon balm
2 tbsp dried lemon balm
2 tsp honey
1 tsp lemon juice
In a tea infuser, steep the lemon balm leaves for a minute or so. (Steep for longer if you like a strong tea.)
Sweeten with honey and add the lemon juice.
Pour & enjoy!
